...Food coloring is often added to give it a red color, and it is also known as momijiko. The specialty of Hakata, karashi mentaiko, is pickled in salt and chili peppers, and its name comes from the Korean name for pollock, which is mentai or mintai. All of the above can be used as is or grilled as sake fish, rice dishes, salads, canapes, etc.
