...The most representative of the former is chawanmushi, which includes udon noodles in odamakimushi, kuyamushi, which adds tofu and tops it with kuzu sauce, and tamago tofu, which is made only with egg juice (egg). Fish and shellfish dishes include chirimushi, which uses a lidded bowl, turnip steamed, and soba steamed, as well as shio-mushi and sake-mushi. Chirimushi is made by combining sea bream, tilefish, stonefish, and cod with tofu and vegetables, steaming them in dashi, and eating them with ponzu soy sauce and garnishing them with momiji oroshi (grated daikon radish) and chopped green onions.
