...Many of the local specialties are meat dishes, mainly mutton and chicken. Famous cooking methods include tandoori cuisine, in which ingredients marinated in spices are cooked in a large earthen oven (tandoor), kabab cuisine, in which meat is skewered and roasted, and kholmar cuisine, in which meat is stewed in yogurt. Yogurt is used effectively to tenderize the meat.
