Browning phenomenon - browning

Browning is the process by which animals, plants, food, or compost or soil containing accumulated animal and plant remains turn brown. The enzyme and chemical reactions involved in this process are called browning reactions. The browning reactions that occur during food processing and storage are particularly well known.
