[use]
The water used to boil bonito for making dried sardines has long been called katsuoirori (fish soup) and used as a seasoning. The name katsuobushi (dried bonito flakes) has been seen in various places since the Muromachi period, and it is clear that it was used to make soup stock; the names Tosa-bushi and Kumano-bushi appear in the Honcho Shokan (1697).

...The one for shiitake mushrooms is said to be sodium guanylate. The word dashi stock first appeared in the Chujiruiki, which is thought to have been compiled in the late Kamakura period, but in fact, katsuoirori (fish soup stock) and similar products had been used since ancient times. Fish soup stock appears in the Yoro Fuyakurei, but it seems to have been made by boiling down the water used to make boiled bonito.
