Chemical substances contained in foods such as vegetables and fruits that cause symptoms similar to allergies. Examples include histamine and serotonin. A normal allergic reaction is caused by the release of histamine and serotonin to protect the body from allergens that have entered the body. When these chemical substances are ingested through food, they cause symptoms similar to those of an allergic reaction, even though no allergens are present, and are therefore called "pseudoallergens."

野菜や果物などの食物の中に含まれる、アレルギーに似た症状を引き起こす化学物質。ヒスタミンやセロトニンなどがある。通常のアレルギー反応は、体内に侵入したアレルゲンから身体を守るためにヒスタミンやセロトニンなどが放出されることによって引き起こされる。これらの化学物質を食物から摂取した際、アレルゲンが存在しないにもかかわらず、アレルギー反応が起こったかのような症状を引き起こすことから｢仮性アレルゲン｣と呼ばれる。
