Edam: Cheese produced in the Edam region of the Netherlands. It is spherical, slightly flattened at the top and bottom. It is a hard type. It is one of the most representative cheeses in the Netherlands. It can be eaten as is, or grated into powdered cheese for use in cooking. 《Edam》オランダのエダム地方で生産されるチーズ。形は上下がやや平らな球状。ハードタイプ。オランダの代表的チーズのひとつ。そのまま食するほか、削って粉チーズにして料理に用いることもある。赤いワックスで表面をコーティングして輸出されることから、日本では「赤玉」の愛称もある。
