...The "Kefukisou" published in 1645 (Shoho 2) lists local specialty somen noodles from various regions, including Yamashiro's "Daitokuji Steamed Somen" and Yamato's "Miwa Somen," as well as Ise, Musashi's Koga, Echizen Maruoka, Noto Wajima, Bizen Okayama, Nagato Chofu, and Iyo Matsuyama. Nowadays, the famous somen noodles are Shiroishi somen from Miyagi prefecture, Ookado somen from Tonami, Toyama prefecture, Mie no ito from Yokkaichi, Mie prefecture, Ibono ito from Tatsuno, Hyogo prefecture, Miwa somen from Sakurai, Nara prefecture, Handa somen from Tokushima prefecture, Shima no hikari from Shodoshima, Kagawa prefecture, Goshiki somen from Matsuyama, Ehime prefecture, and Sugawa somen from Nishiarie, Nagasaki prefecture. Traditional hand-stretched somen noodles are highly valued. They are made during the cold season and stored in warehouses until they are shipped after the rainy season.
