An annual plant of the Chenopodiaceae family (illustration) cultivated for food. It is named akaza because the bud centers and young stems and leaves are red. Chenopodium album L. (English name: lamb's-quarters), which has a less noticeable red color, is a weed in fields and wastelands and is known as a nitrogen-loving plant. The stems branch out well and well-grown ones can reach over 1.5m. The leaves are diamond-shaped, oval (illustration), and soft, powdery white. The flowers bloom from August to October and are densely packed on a spike-like axis. The inflorescence is a panicle. The perianth is small, about 1mm long.
