It goes on to say that colored agar is made by dyeing it red with sappanwood, that it is made in Fushimi (present-day Kyoto City), and that it is used extensively in the cooking of monks. …　寒天の語が見られるようになるのは《和漢三才図会》(1712)あたりからで，同書には〈石花菜（ところてん）〉を寒夜に煮て屋外に置くと〈凝凍して甚だ軽虚なり，俗にこれを寒天と謂う〉とある。それに続けて，スオウで赤く染めたのを色寒天といい，伏見(現，京都市)でつくっていること，それが僧家の料理に重用されていることなどを述べている。寒天の使用によって大きな変化が生まれたのは菓子で，寛政(1789‐1801)ごろ創製された練りようかんは圧倒的な人気を博したものであった。…
