It has been an important aromatic vegetable since ancient times, and the Wamyōshō uses the word 'ginger-rui' as a general term for aromatic vegetables, giving the Japanese names for 'fresh ginger' as 'kure no hajikami' or 'ana hajikami', and 'dried ginger' as 'hoshi hajikami'. Later, it came to use the name 'hajikami', which is thought to have originally referred to sansho (Japanese pepper), and even today ginger with leaves and vinegared ginger are called hajikami.
