It has long been known that glycogen, albumin, and other substances disperse in water to form stable colloids. These substances do not coagulate even when small amounts of electrolytes are added, and because they have a strong affinity for water, they are called hydrophilic colloids. Around 1930, H. Staudinger and others discovered the existence of large molecules (polymers), and the concept of molecular colloids, in which large molecules float alone or in small groups, was established.
