Daikon radish, konnyaku, kelp, ganmodoki, hanpen, chikuwa, satsumaage, tofu, etc. are often used. It is eaten with mustard. ◇It is also called "stewed oden". In Kansai, it is also called "Kanto-taki". It can also refer to konnyaku skewered, boiled, and soaked in miso, which is also called "miso oden ". "Oden" is thought to be an abbreviation of "dengaku" with the prefix "o", and in old documents it can also refer to dengaku (especially kinome dengaku). In contrast to the old "dengaku (dengaku-yaki)" which is grilled with miso paste, miso-stewed dishes began to appear in the late Edo period, and the term "oden" was used to distinguish this. 野菜や練り物などを多量の汁を用いて煮込んだ料理。しょうゆ味のだし汁を用いることが多い。大根・こんにゃく・昆布・がんもどき・はんぺん・ちくわ・さつま揚げ・豆腐などがよく用いられる。からしをつけて食べる。◇「煮込みおでん」ともいう。また関西では「関東炊き」ともいう。こんにゃくに串に刺してゆで、みそをつけたものをいうこともあり、これは「みそおでん」ともいう。「おでん」は「田楽(でんがく)」の略に接頭語「お」がついたものとされ、古い文献などでは田楽(特に木の芽田楽)をいうこともある。練りみそをつけて焼く、古くからある「田楽(田楽焼き)」に対し、江戸時代後期にみそを用いて煮込むものが見られるようになり、これを区別して「おでん」というようになった。こんにちもっとも一般的なしょうゆ味のだし汁で煮込むものは、その後、明治期頃に作られるようになったとされる。⇒田楽、木の芽田楽
