Upland rice - Okabo
Also called "rikutou." A type of rice cultivated in fields. The opposite of paddy rice. There is no essential difference between upland rice varieties and paddy rice varieties, but there are some differences in morphology, physiology, and ecology. In general, upland rice varieties have longer stems and wider leaves than paddy rice varieties, and many of them droop. They have a higher water absorption capacity and oxygen requirement during germination. They are less drought-resistant than other field crops, and prefer soil rich in humus and with strong water-retaining capacity. Brown rice is less sticky and slightly inferior in flavor to paddy rice varieties, so glutinous rice varieties are often cultivated as upland rice and are used in making sweets, etc. They are widely cultivated in the Kanto and Kyushu regions, but the production volume is much smaller than paddy rice. However, rice cultivation is increasing worldwide in areas where it is difficult to create paddy fields, and upland rice cultivation is likely to become important in the future.

〈りくとう〉とも。イネのうち畑に栽培される形態のもの。水稲の対語。陸稲品種と水稲品種との間には本質的な差はないが,形態,生理,生態面で多少異なる点がある。一般に陸稲品種は水稲品種よりも茎は長大で,葉の幅は広く,下垂するものが多い。発芽時の水分吸収力,酸素要求度は高い。他の畑作物に比べ耐干性は弱く,腐植質に富んだ保水力の強い土壌を好む。玄米は水稲品種よりねばりがなく味もやや劣るため,陸稲としては糯(もち)米品種が多く栽培され,菓子製造などに利用される。関東,九州地方に多く栽培されているが,生産量は水稲に比べはるかに少ない。しかし世界的には水田造成が困難な地帯でのイネ栽培が増えており,陸稲の栽培は今後重要となる可能性が大きい。
