A biennial plant of the Asteraceae family (APG classification: Asteraceae). Japanese name: Kikujisha (Kikuzasha) or Nigajisha (Nigajisha). In the early stages, the stem does not grow, and the leaves, 10-20 cm long, grow overlapping each other. The leaf shape varies depending on the variety, and the color varies from green to yellow-green, and the texture is fragile. The flower stalk is upright, 0.5-1.3 meters long, and produces indigo flowers 3-4 cm in diameter. The achene is 2-3 mm long, 1 mm in diameter, grayish white, and has a scaly pappus. It is cultivated in fields as a vegetable. Native to the eastern Mediterranean coast, it has been cultivated since the ancient Egyptian and Greek eras. It has been cultivated in Japan since the mid-Meiji period.

Seeds are sown in August, and in October, when the basal leaves have grown to about 20 centimeters in length, they are tied together and the inner leaves are blanched before harvesting. Those that are not blanched have a strong bitter taste. They are used in salads, and are enjoyed for their unique aromatic and bitter flavor. There are also varieties for simmered dishes. They are broadly divided into crinkled varieties, which have many notches and curled leaves, and broad-leaved varieties, which have broad leaves with few notches, and in Japan, the crinkled varieties are mainly cultivated.

キク科(APG分類:キク科)の一、二年草。和名キクヂシャ(菊萵苣)、ニガヂシャ(苦萵苣)。初期には茎は伸びず、長さ10~20センチメートルの葉が重なって生える。葉形は品種によってさまざまで、色も緑から黄緑まで変異があり、質はもろい。花茎は直立して0.5~1.3メートルになり、径3~4センチメートルの藍(あい)色の花をつける。痩果(そうか)は長さ2~3ミリメートル、径1ミリメートル、灰白色で鱗片(りんぺん)状の冠毛がある。野菜として畑に栽培される。東部地中海沿岸の原産で、古代エジプト・ギリシア時代から栽培された。日本での栽培は明治中期以降である。

 8月に種を播(ま)き、10月ごろ、根出葉が長さ約20センチメートルに発育したら束ね、内部の葉を軟白してから収穫する。軟白しないものは苦味が強い。サラダ用とし、特有の芳香と苦味を伴った風味が賞味される。また、煮物用の品種もある。葉に切れ込みが多くて縮れる縮葉種と、広葉で切れ込みの少ない広葉種に大別され、日本ではおもに縮葉種が栽培される。
