A pale yellow oil obtained from perilla seeds. It is also called perilla oil. The fatty acids of the glycerides that make up perilla oil are mostly polyunsaturated fatty acids, as shown in the table. It is a typical drying oil that polymerizes and hardens very easily. Taking advantage of this property, it was mixed with lacquer in Japan to make transparent lacquer and was also used to make oil paper, but in recent years it has been replaced by cheaper tung oil and synthetic drying oils. エゴマの種から得られる淡黄色の油。エゴマ油ともいう。荏油を構成するグリセリドの脂肪酸としては,表に示すように高度不飽和脂肪酸が多い。代表的乾性油で,きわめて容易に重合,硬化する。この性質を利用して,日本では漆に混合して透明漆の原料とし,また油紙の作製にも用いられていたが,近年は安価なキリ油や合成乾性油等に代替されている。食用にも供される。【内田 安三】
