Mizutaki - Mizutaki

A type of hot pot dish. It is made by filling a pot with water, adding dashi such as kelp, heating it, and when it boils, adding animal ingredients, boiling them briefly, and eating them with a sauce such as ponzu soy sauce. Ingredients include chicken, thinly sliced ​​beef or pork, fish, and generally vegetables, mushrooms, tofu, etc. The broth is unflavored, and it is boiled in water with simple dashi such as kelp, so it is called mizutaki. It is generally found in the Kansai region, but has become widely eaten throughout the country. It is originally called "Hakata mizutaki", which uses chicken chopped up with the bones, and is said to have been introduced from China. In addition to ponzu soy sauce, sesame sauce is also used as a sauce.

鍋(なべ)料理の一種。鍋に水を張り、昆布などのだしを入れて加熱し、沸騰したところへ動物性の材料を加えてさっと煮、ぽん酢しょうゆなどのたれで食べるものをいう。材料としては、鶏肉、牛肉や豚肉の薄切り、魚などのほか、一般には野菜、キノコ、豆腐なども用いられる。煮汁に味をつけないで、昆布など単純なだしだけの湯で煮るので水炊きとよばれる。一般に関西が主であるが、全国的にも広く食べられるようになった。そのもとは、骨ごとぶつ切りの鶏肉を用いる「博多(はかた)水炊き」といわれ、中国から伝わったものといわれる。たれには、ぽん酢しょうゆのほか、ごまだれなども用いられる。
