Also called mayonnaise sauce. A sauce made from vegetable oil, eggs, vinegar, and seasonings. It was first made in France in the 18th century. Some sauces use whole eggs, while others use only egg yolks. It is made by mixing and emulsifying egg (yolk), vinegar, and seasonings, then gradually adding oil and finishing with vinegar. As it is a non-sterilized food, attention must be paid to hygiene during preparation, and since the quality of the emulsion depends on the freshness of the egg yolk, it is preferable to use fresh eggs. The Japanese Agricultural Standards (JAS) prohibit the use of emulsion stabilizers and colorants other than egg yolk and egg white, and a product with a moisture content of 30% or less and crude fat of 65% or more is considered to be acceptable. Therefore, products that do not use eggs but use soy lecithin cannot be called mayonnaise. マヨネーズソースともいう。植物油,卵,食酢,調味料から調製したソース。 18世紀にフランスで初めてつくられた。全卵を使うものと卵黄のみを使うものがある。作り方は,卵 (黄) ,食酢,調味料を混合乳化し,次いで油を徐々に加え,食酢を添加して仕上げる。殺菌しない食品なので,調製中は衛生面に気を配らねばならず,また乳化のよしあしは卵黄の鮮度によることから,使用するのは新鮮な卵が望ましい。日本農林規格 JASでは卵黄,卵白以外の乳化安定剤,着色剤の使用は禁止され,水分 30%以下,粗脂肪 65%以上を合格品とする。したがって,卵を使わずに大豆レシチンを使用したものはマヨネーズとは呼ばないとしている。
