When quaternary ammonium hydroxide is heated to around 100°C, one of the C-N bonds breaks, producing an alkene, a tertiary amine, and water (Hoffmann decomposition). In this reaction, if there is a possibility that two or more alkenes are produced, the empirical rule is that the alkene with fewer substituents is more likely to be produced. If an ethyl group is included, ethylene is most likely to be produced. This general rule was discovered in 1851 by A. W. von Hoffmann of Germany.
