Generally, it is a type of Western-style fresh confectionery, and in Japan it is often called purin, which is a corrupted form of the word. There is also a dish called pudding, which is served as a side dish with roast beef, and both have been handed down for a long time in British home cooking. (1) Custard pudding The ingredients are egg yolks, sugar, milk, and flavorings. A pudding mold is coated with butter. Egg yolks and sugar are mixed well and thinned with milk, then placed in a water bath and boiled to about 80 degrees Celsius. Once cooled, flavorings are added (called custard), and the mixture is poured into a mold and steamed to harden. It is similar to Japanese egg tofu, and can also be steamed in the oven. (2) Plum pudding This steamed confectionery is especially indispensable for Christmas dinner. It is said to have been invented in the late 17th century, during the reign of Charles II. It is a rich pudding containing fruits such as plums, and is enjoyed in small portions. (3) Yorkshire pudding: A roast beef pudding, a typical British dish. It is made by mixing chopped beef fat with flour and baking it. It is always served with roast beef and horseradish as a side dish.

一般には洋風生菓子の一種をいい、日本ではプリンと訛(なま)ってよぶことも多い。また、ローストビーフなどに付け合せとして添える料理プディングもあり、いずれもイギリスの家庭料理のなかで古くから受け継がれてきている。(1)カスタードプディングcustard pudding 材料は卵黄、砂糖、牛乳、香料。プディング型にバターを塗っておく。卵黄、砂糖をよく練り混ぜて牛乳でのばし、湯煎(ゆせん)にして80℃ぐらいに煮て、冷えたところに香料を加えたもの(カスタードという)を、型に流して蒸して固める。日本料理の卵豆腐に等しく、オーブンで蒸し焼きにすることもできる。(2)プラムプディングplum pudding とくにクリスマスディナーには欠かせない蒸し菓子である。17世紀後半、チャールズ2世の時代にくふうされたものだといわれている。プラムなどの果実の入ったこくのあるプディングで、少量を楽しむものである。(3)ヨークシャープディングYorkshire pudding ローストビーフプディングとして、イギリスの代表的な料理である。作り方は、刻んだ牛脂肪を小麦粉と混ぜて、焼き上げたもので、かならずローストビーフの付け合せとして西洋ワサビとともに供する。
