Feijoada

A Brazilian dish. It originated from the colonial period, when black slaves working on plantations in the northeast salted pigs' feet, ears, skin, tails, and innards, which whites would not eat, and stewed them for a long time with black beans called feijão. It gradually became popular as a national dish in Brazil because it was said to be nutritious and delicious, and is now served at lunchtimes on Wednesdays and Saturdays in many restaurants. Today's feijoada is a dark stew containing salted parts of the pig, as well as raw beef and pork, sausages, and bacon, and is served with white rice, fried green leafy vegetables, manioc (a type of potato) flour called farinha, pepper sauce, and orange wedges. Feijoada or fried vegetables are placed on top of the rice, and mixed according to taste, with farinha or sauce poured over it. Orange can also be sprinkled on top.

ブラジルの料理。植民地時代に北東部のプランテーションで働く黒人奴隷たちが，白人の食べない豚の足や耳，皮，しっぽ，臓物などを塩漬にしておき，フェイジョンという黒豆とともに長時間煮込んで食べたのに由来する。栄養がありおいしいというので次第にブラジルの国民的な料理として普及してゆき，現在では多くのレストランで水曜日と土曜日のランチタイムに供されている。　現在のフェイジョアーダは豚の各部の塩漬のほか，牛や豚の生肉やソーセージ，ベーコンなども入った黒っぽいシチューで，白いご飯や緑色の葉野菜の油炒め，ファリーニャと呼ばれるマニオク（イモの一種）の粉，コショウ入りのソース，櫛型に切ったオレンジなどの皿とともに出される。ご飯の上にフェイジョアーダや野菜炒めをのせ，ファリーニャをふりかけたり，ソースをかけたりして，好みに応じて混ぜ合わせて食べる。オレンジをふりかけてもよい。
