Bavarian cream - Bavaroa (English spelling) bavarois French

A cold dessert. Antonin Carême, said to be the father of French cuisine, was a head chef who brought together European cuisine from the 18th to 19th centuries. In his time, it was called Fromage Bavarian and contained cheese, but later it was no longer made with cheese and the name simply became Bavarian. It is characterized by its soft texture and smooth taste, and is popular for its mellow flavor. The ingredients include milk, egg yolks, fresh cream, gelatin, and flavorings. Fruit juice can also be used instead of milk, but it is flavored with liquor and served chilled in the refrigerator. To make Custard Bavarian for four people, mix two egg yolks, 30 grams of sugar, and 180cc of milk well. Heat to about 80-90℃ while constantly stirring with a wooden spoon, add 6 grams of gelatin and mix well, then cool to remove heat, combine with 50cc of whipped cream, add 1 teaspoon of vanilla extract and chill in ice water. Pour into a mold just before it hardens and place in the refrigerator to harden.

冷たいデザート菓子。フランス料理の祖といわれるアントナン・カレームは、18世紀から19世紀にかけてのヨーロッパ料理を集大成した調理長であった。彼の時代にはフロマージュ・ババロアとよばれチーズが入っていたが、その後チーズを入れなくなって、名前も単にババロアになった。柔らかい口あたりの滑らかさが特徴で、まろやかな味が好まれている。材料は牛乳、卵黄、生クリーム、ゼラチン、香料などを使う。牛乳のかわりに果汁なども使われるが、洋酒などで香りをつけ、冷蔵庫で冷やして供するデザートである。カスタード・ババロアを例に4人分の作り方を述べると、卵黄2個、砂糖30グラム、牛乳180ccをよく混ぜ合わせる。木杓子(しゃくし)で絶えず混ぜながら80～90℃ぐらいまで熱し、ゼラチン6グラムを入れてよく混ぜ、冷やして熱をとり、泡立てた生クリーム50ccとあわせ、バニラエッセンス小さじ1を入れて氷水で冷やす。固まる寸前を型に流し、冷蔵庫に入れて固める。
