An alcoholic drink made by fermenting the sugars contained in honey, which make up about 80% of the total. In English, it is called mead. Honey's sugars are mostly glucose and fructose, and when diluted with water, yeast grows and ferments, easily turning it into alcohol, so mead wine has been made since ancient times. In China, it is called honey wine, and the Northern Song poet Su Shi (1036-1101) is said to have made wine from honey and composed a song about honey wine ("Mo Zhuang Manlu"). はちみつ中に約80%含まれる糖分を発酵させてつくった酒。英語ではミードmeadという。はちみつの糖分は大部分がブドウ糖と果糖で,水で薄めれば酵母が生えて発酵し,容易に酒となるので,はちみつ酒は古くからつくられていた。中国では蜜酒と呼び,北宋の詩人蘇軾(そしよく)(1036‐1101)はみつで酒をつくり,蜜酒歌をつくった(《墨荘漫録》)という。現在イギリスやポーランドでは,本来のミードではないが,その系譜をつぐミードワインやミードリキュールがつくられている。
