A traditional German sweet. It means "wooden sweet". It is also called Schichttorte (layered sweet) or Baumkuchen Torte. It is said that it was made outdoors in Germany long ago, by burning pine wood and baking it while transferring the natural scent. The cut surface resembles the tree rings, and it is considered Germany's best sweet, and is also used as a sweet to celebrate longevity on birthdays and other occasions. It is said that it was brought to Japan by a baker who was a German soldier captured during World War I. It is made by baking in a special Baumkuchen baking machine. The cake batter (kiji) is poured onto a roller and baked while rotating, and when it has browned, more batter is poured on and baked. This is repeated about 20 times until it is baked to create layers. The batter mixture and heat control are difficult, and it is difficult to make unless you are an experienced craftsman. To finish, a thin layer of apricot jam is spread on top to prevent the cake from drying out, and powdered sugar is sprinkled on top. Cut into pieces as desired, or serve with whipped cream if you prefer it smooth and moist.

ドイツの伝統的菓子。「木の菓子」の意。シヒトトルテSchichttorte(層の菓子)またはバウムクーヘントルテBaumkuchen Torteともいう。昔ドイツで、野外でつくったといわれ、マツの木を燃やして、その自然の香りを移しながら焼いたともいわれている。切り口は木の年輪状になっており、ドイツ最高の銘菓とされ、誕生日などに長寿を祝う菓子としても使われている。日本には第一次世界大戦のとき、捕虜となったドイツ兵のパン職人が伝えたともいわれている。作り方は、特殊なバウムクーヘン焼物器で焼き上げる。ローラーにケーキ生地(きじ)をかけて回しながら焼き、焼き色がついたらまた生地をかけて焼く。20回ほど繰り返し、層ができるように焼き上げる。生地の配合や火の加減がむずかしく、年季の入った職人でなければなかなかできない。仕上げにケーキの乾燥を防ぐために、アンズジャムを薄く塗って粉砂糖をかける。好みに切り分けて食べるが、しっとりとした滑らかさを好むときには、ホイップクリームを添える。
