A perennial plant of the lily family. It has been an important vegetable in the Orient for a long time, but is not widely cultivated in the West. The bulbs are white and not swollen. The leaves are tubular and hollow. In May and June, it grows a flower stalk about 70 cm tall and produces many white flowers. The inflorescence is initially oval with a pointed tip and is wrapped in an inflorescence, but during the flowering period, the inflorescence breaks and becomes spherical, and is commonly called leek-bouzu. It is broadly divided into two types: Nebuka and Fukaneg, which have almost no branching and use the blanched leaf sheaths as food, and Hanegion and Senbonegion, which repeatedly branch and produce a large number of leaves and use the leaves and leaf sheaths as food. Note that the Allium genus, which is represented by green onions, is sometimes not placed in the Liliaceae family but in the Amaryllidaceae family, or is sometimes placed independently in the Alliaceae family.

ユリ科の多年草。東洋ではかなり古くから重要な野菜となっているが，欧米ではあまり栽培されない。鱗茎はふくれず白色。葉は筒状で中空。5～6月頃，高さ約 70cmの花茎を伸ばし，白色の花を多数つける。花序は初め卵円形で先がとがり，総包に包まれているが，開花期に総包が破れて球状になり，葱坊主と俗称される。ネブカ，フカネギなど軟白された葉鞘部を食用にする株分れのほとんどない系統と，ハネギ，センボンネギなど株分れを繰返しきわめて多くの葉をつけて葉と葉鞘部を食用にする系統とに大別される。なお，ネギに代表されるネギ属をユリ科に入れず，ヒガンバナ科に入れたり，独立してネギ科とすることもある。
