A type of soft candy. Sugar and starch syrup are boiled down, and whipped egg whites and gelatin are added to incorporate air bubbles, then nuts and other ingredients are mixed in and hardened. The air bubbles give the candy a soft texture. The name comes from the Latin nux (walnut). The typical method of making nougat is to first combine sugar, starch syrup, and water, heat to 120°C, and boil down. Separately, egg whites are thoroughly whipped, and boiled syrup is added while stirring vigorously. When the sugar crystallizes and hardens, chopped nuts are added, and the mixture is poured flat into a container, cooled, hardened, and cut into bite-sized pieces. In addition to nuts such as almonds and peanuts, jams and candied fruits can also be added.
