Meat extract

This is a component that dissolves when meat is boiled in water, and is produced by vacuum concentrating meat soup, which is 95% water, to about 18% through several processes. It is often used as a food additive to improve the taste of instant foods. Meat extract makes up about 2% of meat, of which 0.7% is organic and 1.3% is inorganic, with almost no protein. Among the organic substances, nitrogen-containing compounds include creatine, creatinine, purine bases, carnosine, urea, and inosinic acid, while non-nitrogenous organic compounds include lactic acid, glucose, and glycogen. Inorganic substances include sodium, potassium, calcium, iron, chlorine, phosphorus, sulfur, and magnesium. The finished product changes subtly depending on the temperature and time of boiling, and the right one will produce a reddish-brown paste with the taste and aroma of meat.

肉を湯煮したときに溶け出てくる成分のことで、肉スープの水分95%のものを数段階の過程を経て、18%くらいまで真空濃縮したものをいう。これは食品添加物として、インスタント食品の味の向上に用いられることが多い。肉のエキス分は肉中に約2%含まれ、このうち有機物は0.7%、無機物は1.3%で、タンパク質はほとんど含まれない。有機物のうち含窒素化合物はクレアチン、クレアチニン、プリン塩基、カルノシン、尿素、イノシン酸などで、無窒素有機物は乳酸、グルコース、グリコーゲンなどが含まれる。無機質としてはナトリウム、カリウム、カルシウム、鉄、塩素、リン、硫黄(いおう)、マグネシウムなどがある。湯煮の温度、時間などによって、仕上がりは微妙に変化し、適当なものは肉の味と香りをもつ赤褐色のペーストとなる。
