A general term for sugar dicarboxylic acids obtained by oxidizing the terminal aldehyde group and primary alcohol group of aldose (monosaccharide with an aldehyde group) and converting both to carboxyl groups, and the oxidation is carried out with a strong oxidizing agent such as concentrated nitric acid. The sugar acid of glucose is also called glucaric acid or glucosaccharic acid, and is the most representative sugar acid, so this is what is usually meant when people simply say sugar acid. It is a white powdery crystal with a melting point of 125-126°C, absorbs water to become syrup-like, and easily forms lactone at room temperature. This lactone can be reduced to glucuronic acid. In addition, the sugar acid of galactose is called galactaric acid or galactosucrose acid, which has a melting point of 213°C and is difficult to dissolve in water.It is also called mucic acid and is used to confirm galactose.
