A sake unique to the Kumamoto region. Made from rice, the fermented mash is left for several tens of days, wood ash is added to neutralize the acid, and the sake is pressed. Recently, it has been sweetened to a sugar content of about 10-18%. The alcohol content is about 12%. The sugar and amino acids combine to give it a reddish-brown color. The name Akazake comes from this color. It is used on celebrations and as a New Year's sake, and in cooking, it plumps up meat and adds shine. Akazake is made neutral to alkaline using wood ash to prevent the invasion of fire-off bacteria, and is also called Akumochi sake because it is not pasteurized. In Kagoshima and Miyazaki prefectures, there is a sake made in a similar way, called Jizake (said to be the opposite of the term Jyozake used to refer to Seishu). Jidenshu from Matsue City, Shimane prefecture is also a similar type of sake.
