Sorbitol
Its chemical formula is C 6 H 1 4 O 6 . It is also known as sorbitol or glucitol. It is a hexahydric alcohol found in fruits such as apples, pears, plums, and cherries. It is a sweet, colorless crystal with a melting point of 93-94°C. It is easily soluble in water and hot alcohol. It is produced by hydrogenation or electrolytic reduction of D-glucose. It is used as a raw material for the production of vitamin C and surfactants, and is used as a substitute for sucrose by diabetics.
