Also known as sugar beet. A biennial plant of the Chenopodiaceae family native to the Mediterranean coast and Central Asia. It is 1-2m tall, has long petioles, and has thick, wrinkled, elliptical leaves. It produces small yellow-green flowers in early summer. The taproot swells into a cone-shape about 30cm long in the first year after sowing, accumulating 15-25% sugar, which is then pressed to produce sugar from the juice. The stems, leaves, and pomace are also used as animal feed. It prefers cool climates, and is mainly produced in Russia, the United States, and France. It was introduced to Japan during the Meiji period, with Hokkaido being the main production area.

サトウダイコンとも。地中海沿岸から中央アジア原産のアカザ科の二年草。高さ１〜2m，葉柄は長く，葉は楕円形でしわがあり厚い。花は初夏咲き，小さく黄緑色。主根は播種後１年目には円錐形に肥大し長さ約30cm，15〜25％の糖分を集積するので，これを圧搾し搾汁から砂糖を製造する。また茎葉やしぼりかすは飼料とされる。冷涼な気候を好み，ロシア，米国，フランスなどが主産地。日本へは明治時代に渡来し，北海道が主産地。
