Also known as sugar beet. A biennial plant of the Chenopodiaceae family native to the Mediterranean coast and Central Asia. It is 1-2m tall, has long petioles, and has thick, wrinkled, elliptical leaves. It produces small yellow-green flowers in early summer. The taproot swells into a cone-shape about 30cm long in the first year after sowing, accumulating 15-25% sugar, which is then pressed to produce sugar from the juice. The stems, leaves, and pomace are also used as animal feed. It prefers cool climates, and is mainly produced in Russia, the United States, and France.
