Glass-like crystals that form in canned seafood. Colorless or slightly colored glass-like precipitates can be found on the surface of canned meats made from crab, squid, tuna, etc. They range in size from the size of a grain of sand to over 1 cm in length, and can number from one to countless. Their composition is magnesium ammonium phosphate Mg(NH 4 )PO 4 ・6H 2 O. Although it is physiologically harmless to eat, the hard diamond-shaped crystals can cause mouth injuries and are suspected to be glass fragments, reducing the commercial value of the canned food.
