Glass-like crystals that form in canned seafood. Colorless or slightly colored glass-like precipitates can be found on the surface of canned meats made from crab, squid, tuna, etc. They range in size from the size of a grain of sand to over 1 cm in length, and can number from one to countless. Their composition is magnesium ammonium phosphate Mg(NH 4 )PO 4 ・6H 2 O. Although it is physiologically harmless to eat, the hard diamond-shaped crystals can cause mouth injuries and are suspected to be glass fragments, reducing the commercial value of the canned food. 魚介類缶詰に生成するガラス状の結晶。カニ,イカ,マグロなどを原料とする缶詰肉の表面などに,無色またはわずかに着色したガラス状の析出物が見られることがある。大きさは砂粒程度のものから長さ1cm以上に及ぶものがあり,数も1個から無数に及ぶ。その組成はリン酸アンモニウムマグネシウムMg(NH4)PO4・6H2Oである。食べても生理的には無害であるが,菱形のかたい結晶のため口中を傷つけることがあり,ガラス細片と疑われ缶詰の商品価値を損なう。
