White sake and black sake - Shirokikuroki
This is the sake offered at the Niinamesai and Daijosai festivals. Shirozake is made by straining raw sake as it is brewed, and is so named because of its white color. Kurozake is made by adding ash from Kusaki tree to shirozake. For the Daijosai, it is brewed in the Shirozake Hall (made with white wood) and Kurozake Hall (made with black wood) located within the Saihain. According to the provisions of the Engishiki, the sake brewer brewed 1 to 7 sho 8 go 5 shaku of each. [Mogi Sadazumi]
