This is the sake offered at the Niinamesai and Daijosai festivals. Shirozake is made by straining raw sake as it is brewed, and is so named because of its white color. Kurozake is made by adding ash from Kusaki tree to shirozake. For the Daijosai, it is brewed in the Shirozake Hall (made with white wood) and Kurozake Hall (made with black wood) located within the Saihain. 新嘗祭(にいなめさい),大嘗祭(だいじようさい)に供する酒のこと。白酒は,醸したままの原酒をこしたもので,色が白いためこの名がある。黒酒は,この白酒にさらに久佐木(くさき)の灰を加えてつくったもの。大嘗祭においては,斎場院の中に設けられた白酒殿(白木をもって構える),黒酒殿(黒木をもって構える)でそれぞれ作られる。《延喜式》の定めによれば造酒司によって,それぞれ1斗7升8合5勺ずつ醸造された。【茂木 貞純】
