Shiraebi (white shrimp) - Pasiphaea japonica
A shrimp of the Ophiopogonidae family, about 8 cm long, is dried or dyed with food coloring and dried as a substitute for sakura shrimp (illustration). It is colorless and transparent when alive, but turns milky white when dead, which is why it is also called bekkoebi. The eggs are a beautiful blue-green color. The body is extremely flattened from side to side. The cephalothorax is short, not reaching 1/3 of the body length. The rostrum is small and vestigial, being merely a spine pointing slightly upwards. The first and second thoracic legs are large, both with pincers, and the inner edges of the long segments are lined with numerous spines in a serrated pattern.

体長8cmほどの甲殻綱オキエビ科のエビで,素干し,あるいは食紅で染めて乾燥し,サクラエビの代用とされる(イラスト)。生きているときは無色透明であるが,死ぬと乳白色となるためベッコウエビとも呼ばれる。卵は美しい青緑色。体は左右に著しく平たい。頭胸部は短く,体長の1/3に達しない。額角は痕跡的で小さく,やや上方を向く単なるとげにすぎない。第1,2胸脚は大きく,ともにはさみをもち,また,長節の内縁に多数のとげが鋸歯状に並んでいる。
