A skewered meat dish. Mutton or beef is cut into cubes, soaked in salt, pepper and salad oil, then skewered and grilled over an open flame. Onions and peppers may also be added. Although it is known as a Russian dish, it was originally an outdoor dish cooked by the Tatars, who grilled mutton on a long sword.
