It is an annual plant of the Brassicaceae family, belonging to the turnip/crucifer group. Among the Chinese cabbage varieties that have differentiated in China, this is a group of varieties that do not form heads like Chinese cabbage. It originated in northern China, and since it does not form heads, it is considered to be the primitive form of Chinese cabbage. In the Kanto market, it is traded as a representative pickled vegetable. It is smaller than head-forming Chinese cabbage, and the outer leaves of the plant that have reached maturity hang down to the outside, and the leaves in the center do not join together or form a head. The yellow-green leaf surface is wrinkled and soft.

アブラナ科の一年草でカブ･アブラナ類に属する。中国で品種分化したハクサイ類のなかで，ハクサイのようには結球しない品種群のものである。中国北部で起源し，不結球性なのでハクサイの原始型と考えられる。関東市場では漬菜の代表的なものとして取引されている。結球ハクサイより小型で，成熟期に達した株の外葉は外側に垂れ下がるような形になり，中心の部分の葉も包合･結球することはない。黄緑色の葉面にはしわが多く葉は軟らかい。
