In the past, it was also called Hajikami. It is a deciduous shrub of the Rutaceae family that grows in the mountains from Hokkaido to Kyushu and Chugoku, and is also planted in residential areas. It has a pair of thorns at the base of the leaves, odd-pinnate compound leaves, and a unique fragrance. It is dioecious. In April to May, many small green-yellow flowers grow at the tips of new branches. The fruits are spherical, about 5 mm in diameter, with black seeds inside, and ripen to brown in September to October. The young leaves (leaf buds) and young fruits are used as spices in salads and garnishes for sashimi, and the dried fruits are used as medicines and as a spice. The closely related Fuyuzansho grows in the mountains of warm areas west of the Kanto region, is evergreen, has narrow wings on the leaf axis, and has few leaflets. Inuzansho, which grows in the fields of Honshu to Kyushu, is very similar to Sansho, but has only one thorn and does not grow opposite each other. In addition, the tall tree Zanthoxylum tschonosum has many thorns on its branches and trunk, and its leaves and inflorescences are large. None of the plants are used for food except for Zanthoxylum tschonosum.

古くはハジカミとも。北海道〜九州,中国の山地にはえ,人家にも植えられるミカン科の落葉低木。葉の付け根には1対のとげがあり,葉は奇数羽状複葉,独特の芳香がある。雌雄異株。4〜5月,新枝の先に緑黄色の小花を多数つける。果実は球形で径約5mm,中に黒い種子があり,9〜10月,褐色に熟す。若葉(木の芽)と若い果実を香辛料として,あえ物,刺身のつまなどとし,果実を干したものを薬用,香辛料とする。近縁のフユザンショウは関東以西の暖地の山地にはえ,常緑性で,葉軸には狭い翼があって小葉の数も少ない。本州〜九州の野原にはえるイヌザンショウは,サンショウによく似るが,とげが1本で対生しない。また,高木になるカラスザンショウは枝や幹にとげが多く,葉や花序が大型。サンショウ以外はいずれも食用としては利用されない。
