It is a type of cooked rice or mixed rice. It does not necessarily have to be made with five ingredients, but rather uses many ingredients. Ingredients include kanpyo (dried gourd), shiitake mushrooms, carrots, bamboo shoots, butterbur, lotus root, konjac, kelp, mitsuba (Japanese honewort), wood ear mushrooms, and fried tofu. Animal ingredients include eggs, shrimp, abalone, clams, and white fish such as sea bass and sea bream. The ingredients are cut into thin strips, irregular pieces, or arare pieces, and seasonings are added before cooking with the rice. Some ingredients are pre-cooked before being added. It is also found in the Edo period "Ryori Chohoshu". The name gomoku-meshi is mainly a Kanto term, and in Kansai it is called kayaku-meshi. In Kanto, the ingredients that are placed on top or mixed into the rice are called gu (ingredients), and in Kansai, they are called kayaku (additives). Gomoku-zushi is gomoku-meshi made with vinegared rice. In Chinese cuisine, gomoku rice, which is referred to as "five treasures and ten broths" (kin), is generally highly nutritious.

炊き込みご飯、または混ぜご飯の一種。かならずしも5種の材料でつくるのではなく、数多くの材料を用いてある意である。材料は、かんぴょう、シイタケ、ニンジン、タケノコ、フキ、蓮根(れんこん)、こんにゃく、昆布、ミツバ、キクラゲ、油揚げなどを用いる。動物性のものでは卵、エビ、アワビ、ハマグリや、スズキ、タイなどの白身魚を使う。材料をせん切り、乱切り、あられ切りなどにして調味料を加えて、米といっしょに炊き上げる。材料によっては下煮してから加えるものもある。江戸時代の『料理調法集』にも出ている。五目飯の名称は主として関東の用語で、関西ではかやく飯という。上にのせたり飯に混ぜる材料を関東では具といい、関西では加薬(かやく)という。五目ずしは酢飯を用いての五目飯である。中国料理では五珍十錦(きん)などの文字を用いる五目飯は、だいたい栄養価が高い。
