Oil extracted from sesame seeds by squeezing. When pressed at room temperature, a pale yellow oil is obtained, but oil extracted from roasted sesame seeds is yellowish brown and has a unique aroma and flavor. White sesame seeds are the main raw material. In Japan, it is used alone or mixed with other edible oils as an edible oil for deep-fried foods such as tempura and stir-fried foods. Semi-drying oil. Sesame seeds, the raw material, are abundant in India, China, Myanmar, and Sudan. An example of the fatty acid composition is 42.4% oleic acid, 40.1% linoleic acid, 11.9% palmitic acid, 5.3% stearic acid, and 0.4% linolenic acid.

ゴマの種子から圧搾などにより採取される油脂。常温で圧搾すると淡黄色の油が得られるが,いったゴマから搾られる油は黄褐色で特有の香りと味をもつ。おもに白ゴマが原料とされる。とくに日本では,てんぷら等の揚げ物,いため物用の食用油として,単体あるいは他の食用油と混合して好んで用いられている。半乾性油。原料のゴマはインド,中国,ミャンマー,スーダンに多く産する。脂肪酸組成の一例は,オレイン酸42.4%,リノール酸40.1%,パルミチン酸11.9%,ステアリン酸5.3%,リノレン酸0.4%。
