This aquatic plant is native to Europe and is also known as watercress or Dutch mustard.
It was introduced to Japan as a Western vegetable at the beginning of the Meiji period.
Although it is available all year round, wild watercress can be harvested in early summer, and watercress that is about 8 to 10 cm long is said to have a good flavour and a good texture.
○Nutritional effects: It has a spicy taste, which is due to the same ingredient called sinigrin as wasabi. This ingredient has the effect of increasing appetite and relieving stomach upset.
Since sinigrin helps increase the digestibility of meat fat, it makes sense that it is primarily used as a side dish for meat dishes such as steak and roast beef.
In addition, it is rich in carotene, vitamin C, calcium, and iron, which cleanses the blood and has a tonic effect. People who suffer from anemia or tend to eat too much meat should try to eat it consciously.
It is said to have a powerful detoxifying effect that neutralizes the toxins of nicotine, so it is also recommended for heavy smokers.
It is basically eaten raw in salads, but it can also be quickly boiled and eaten as a salad. When eating it raw, the key is to remove the thick, tough stems. You can also roughly chop it up and fry it in sesame oil.

　ヨーロッパ原産の水生植物で、ミズカラシ、オランダガラシともいいます。
　わが国には明治時代の初めに西洋野菜として入ってきました。
　1年中出回っていますが、自生のクレソンが収穫できるのは初夏で、8～10cmくらいのものが風味があって歯触りもいいとされています。
○栄養成分としての働き
　ピリッとした辛みがありますが、これはワサビなどと同じシニグリンという成分によるものです。この成分は食欲増進、胃もたれ解消の効果があります。
　シニグリンは、肉の脂肪の消化を高める働きをするので、おもにステーキやローストビーフなどの肉料理の付け合わせに用いられるのも、理にかなっているといえるのです。
　また、カロテン、ビタミンＣ、カルシウム、鉄分が豊富で血液をきれいにしたり、強壮効果があります。貧血症の人や、肉食にかたよりがちな人は意識して食べるようにするといいでしょう。
　ニコチンの毒を消す強力な解毒作用があるともいわれるので、ヘビースモーカーの人にもおすすめです。
　基本的には生のまま、サラダなどに用いて食べますが、さっとゆでて和えものにしてもおいしく食べられます。生のまま食べるときは、太くてかたい茎の部分は除いて調理するのがポイントです。また、茎ごとざく切りして、ゴマ油で炒(いた)めても。
