Cooking food. Kappo and ryori are used almost interchangeably, but kappo is a word that appeared in ancient Japanese documents and was introduced from China. The characters wari and ho in kappo each have a different meaning. Wari is pronounced "saku" and refers to food that can be eaten raw after the food ingredients have been prepared or processed to make them palatable. Ho means something that has been cooked and seasoned. In Japanese cuisine, kappo is a combination of raw food such as sashimi, wash, vinegared dishes, salted fish, sea urchin paste, and sea urchin wata, as well as cooked dishes such as grilled dishes, boiled dishes, and steamed dishes. The word kappo is pronounced "namasutsukuru" in the Nihon Shoki, and the word warisen is also used and pronounced "azarakekiwosaku." During the Meiji and Taisho eras, the name kappo restaurant was often used, and the name kappo school also appears. The word kappogi is for women, while the word kappofuku is for men. Currently, the word kappo is used less frequently than ryori (cooking), probably because the character 烹 (cooking) is not included in the list of common kanji.

食物を調理すること。割烹と料理はほぼ同じ意に用いられているが、割烹は日本古代の文献に出ていることばで、中国から伝わったもの。割烹の割と烹は、一字ずつ別の意味をもっている。割は「サク」と訓じ、食品材料を下ごしらえまたは食べよくするだけの処理をして、なまのまま食べられる料理をいう。烹は加熱して味つけしたものをいう。日本料理では、刺身、洗い、酢の物、塩辛、練りうに、このわたなど、なまのまま用いる料理と、焼き物、煮物、蒸し物など加熱した料理がいっしょになったものを割烹というのである。割烹ということばは『日本書紀』では「ナマスツクル」と読んでおり、また、割鮮ということばも用いられ「アザラケキヲサク」と読んでいる。明治・大正の時代には割烹店という名称が多く使われ、割烹学校の名も出ている。割烹着は女性用のものをいい、男性用は割烹服という。現在、割烹ということばは、烹の字が常用漢字にないせいか、料理に比べて使用度が低くなっている。
