The umami flavor of kelp soup stock comes from the monosodium salt of L-glutamic acid (monosodium glutamate). D-glutamic acid also plays an important role in the metabolism of the body. α(アルファ)-アミノ酸の一つで、酸性アミノ酸。略号はGluまたはE。α-アミノグルタル酸ともいい、化学式はC₅H₉NO₄で、分子量は147.13。1866年にドイツの農芸化学者リットハウゼンKarl H. L. Ritthausen（1826―1912）がコムギのグルテンから単離した。L-グルタミン酸はヒトにとっては非必須(ひひっす)アミノ酸である。タンパク質を構成するアミノ酸の一つで、魚類の精子（白子(しらこ)）中のタンパク質プロタミンを除くタンパク質に広く分布する。昆布のだし汁のうま味は、L-グルタミン酸のモノナトリウム塩（グルタミン酸ナトリウム）による。L-グルタミン酸は神経伝達物質（神経細胞間のシナプス伝達の際に軸索の末端にある神経終末から放出される化学物質）の一つである。生体内の代謝でも重要な役割を果たしており、主要経路はTCA回路のα-ケトグルタル酸からグルタミン酸デヒドロゲナーゼの働きによってグルタミン酸となる経路で、これは可逆反応であり、主要なアミノ基転移反応である。また、オルニチンを通じて尿素回路（オルニチン回路）に連絡するほか、アミド化されるとグルタミンになるなど、プロリン、オキシプロリン、ヒスチジンなどのアミノ酸にも通じる。なお、D-グルタミン酸は、枯草菌や炭疽(たんそ)菌などの細菌の莢膜(きょうまく)（細菌細胞の外側に存在する粘性・膠状(こうじょう)の厚い層）中にポリグルタミン酸として存在する。

栄養

コムギのタンパク質グルテンを加水分解したとき得られるアミノ酸であるが、広く食品タンパク質に含まれている。栄養上は非必須アミノ酸である。タンパク質中ではグルタミンの形で存在することが多い。グルタミン酸は各種のトランスアミナーゼの作用によってケト酸（ケトン酸）にアミノ基を移動させ、アミノ酸代謝上重要なアミノ酸であり、糖質、脂質代謝とも関連が深い。
