Crackers - Cracker (English spelling)

A type of biscuit made by mixing flour, fats and oils, salt, yeast, leavening agents, etc., rolling it out thinly and baking it. The word comes from the word crack (to crumble). It has a salty taste and is characterized by a crispy texture when bitten. Yeast fermentation and leavening agents are used to make it rise. A typical soda cracker uses a combination of yeast and sodium bicarbonate (baking soda). Depending on the secondary ingredients, there are various types such as cheese crackers, graham crackers (whole wheat crackers), and raisin crackers. Crackers are salty and are used as a staple food for portable meals and snacks, as well as for canapes and confectionery ingredients.

ビスケットの一種で、小麦粉、油脂類、塩、イースト、膨化剤などを混合し、薄く伸ばして焼いたもの。語源はクラックcrack(砕ける)からきたもの。塩味が主体で、かんだときにさくりと砕ける感触が特徴。膨化にイーストの発酵や膨化剤を用いる。代表的なソーダクラッカーはイーストと炭酸水素ナトリウム(重曹)を併用したものである。副材料によってチーズクラッカー、グラハムクラッカー(全粒粉入りクラッカー)、レーズンクラッカーなどの種類がある。クラッカーは塩味のもので、携帯食やスナックなど主食的に、またカナッペや菓子材料にも用いる。
