A colorless liquid with a distinctive anise flavor. Its chemical name is p (para)-propenylphenyl methyl ether. It solidifies when cooled. It is found in large amounts in star anise oil, and is produced by cooling the essential oil to separate the crystals or by fractional distillation. It is also synthesized by reacting anisaldehyde with ethylmagnesium bromide and dehydrating the product. It is used in large quantities as a flavoring for food and sweets. As a spice, it is the component that gives the aniseed its distinctive sweet aroma. It is also used in soap flavorings, mouthwashes, and liqueurs.
