Burdock was called "kitakisu" or "umafubuki" in ancient times, and was also written as "akumitsu." The oldest burdock dish is "nishime gobo" (boiled and dyed burdock), which appears in "Teikin Orai," followed by "tataki gobo" (pounded burdock) in "Kitano Shaka Nikki" (Diary of a House of the Kitano Family).
