This is a Gifu kasutori shochu. Its name comes from the underground water of the Northern Alps used for brewing. It is made by vacuum distilling the sake lees left over after the sake has been pressed. The raw material is sake lees. It has an alcohol content of 25%. The brewery, Hirase Shuzoten, was founded during the Genroku period (1688-1704). It is the brewer of the sake brand Kujudama. It is located in Kamiichinomachi, Takayama City. 岐阜の粕取り焼酎。酒名は、仕込み水に使う北アルプスの伏流水にちなみ命名。清酒をしぼったあとの酒粕を減圧蒸留する。原料は清酒粕。アルコール度数25%。蔵元の「平瀬酒造店」は元禄年間(1688~1704)創業。清酒「久寿玉」の醸造元。所在地は高山市上一之町。
