Japanese: 活魚 - かつぎょ

Seafood is supplied alive until just before cooking. Many of these are high-quality fish, such as red sea bream, flounder, rock bream, and spiny lobster. Riding on the gourmet boom in recent years, the amount of live fish handled at the Tokyo Central Wholesale Market alone has been increasing at an average rate of 6 to 10% per year, indicating a live fish boom. Live fish were previously transported mainly from offshore fish cages or tanks on trucks, but the development of high-tech live fish containers that are automatically controlled by computers has made it possible to supply live fish from remote locations in a more lively state. JR also introduced live fish containers in 1988 and has been transporting them as cargo. Live fish that are kept frozen and transported in a state of suspended animation at ultra-low temperatures are also being used.

調理直前まで生かされて供給される魚介。マダイ，ヒラメ，イシダイ，イセエビなど高級魚が多く，近年のグルメブームに乗って，東京都中央卸売市場での取り扱い量だけでも年平均6～10%の割合で増加しており，活魚ブームを呈している。活魚輸送は，従来は海上生簀 (いけす) やトラックによる水槽が主だったが，コンピュータで自動制御するハイテク活魚コンテナの開発により，遠隔地からもより生きのよい状態で供給できるようになった。 JRも 1988年から活魚コンテナを導入し，貨物輸送を行なっている。魚を超低温で仮死状態にして運ぶ氷眠活魚流通も行なわれている。
