The first ham production in Japan after the Meiji period began in 1872 when Kataoka Iemon of Oura, Nagasaki, learned how to make ham from an American who visited Nagasaki. He built a factory and began production in November of the same year. Following Nagasaki, the Hokkaido Colonization Office, as part of its project, produced prototypes of ho-tai (ham) at the Tokyo Agricultural Experiment Station in 1873 and at a Sapporo pig farm in 1876.
