[Japanese manufacturing history]
The first ham production in Japan after the Meiji period began in 1872 when Kataoka Iemon of Oura, Nagasaki, learned how to make ham from an American who visited Nagasaki. He built a factory and began production in November of the same year. Following Nagasaki, the Hokkaido Colonization Office, as part of its project, produced prototypes of ham at the Tokyo Agricultural Experiment Station in 1873 and at a pig farm in Sapporo in 1876. In 1874, an Englishman named William Curtis began processing ham in Kawakami Village, Kamakura County, Kanagawa Prefecture (now Totsuka, Yokohama City), and this spread to the Japanese, one of whom, Saito Mitsupei, received permission to start a business and officially began producing ham in 1887.

 明治以後の日本のハムの製造は,長崎大浦の片岡伊右衛門が1872年,長崎に来遊したアメリカ人よりハムの製法を伝授され,同年11月,工場を建設して製造を開始したのが最初である。長崎につづいては,北海道開拓使庁がその事業の一環として73年,東京農事試験場において,また76年,札幌養豚場において火腿(ハム)を試作している。1874年には,神奈川県鎌倉郡川上村(現,横浜市戸塚)においてイギリス人カーティスWilliam Curtisが加工に着手し,これが日本人に伝わり,その一人である斉藤満平が87年,創業の許可を得て正式にハム製造を開始した。…
