[Confectionery manufacturing industry]
According to the 1980 Statistics of Industry, the confectionery and bread manufacturing industry in Japan has 18,960 establishments and a shipment value of approximately 3,065 billion yen, making it a large industry that accounts for 23% and 14% of the food manufacturing industry, respectively. The confectionery and bread manufacturing industry includes bread manufacturing (shipment value share 30%), fresh confectionery manufacturing (25%), biscuit and dried confectionery manufacturing (9%), rice confectionery manufacturing (10%), and other confectionery and bread manufacturing (chocolate, chewing gum, candy, etc.) (27%) (for information on bread, please refer to the entry for that product).
